Calculation method

Each quantity is multiplied by desired servings ÷ original servings. Culinary education materials describe this as a conversion-factor method; see the adjacent explanation from Auguste Escoffier School of Culinary Arts.

The engine stores the serving ratio and ingredient quantities as reduced fractions, so values such as 3/4 scaled by 1/2 return exactly 3/8.

What the result does not decide

  • Units stay exactly as entered. The calculator does not guess ingredient density or convert volume to weight.
  • Cooking time, temperature, equipment capacity, and seasoning may not change in a simple linear ratio. Nebraska Extension recommends care when reducing recipes and gives practical measurement guidance in its recipe-reduction guide.
  • Use a tested recipe and verify doneness and safe temperatures separately. FoodSafety.gov publishes safe minimum internal-temperature guidance.
